Sesame Flatbread with Vegetable Filling
Rinse the tomatoes and cut into slices. Rinse the cucumber, halve lengthwise and cut into thin slices. Rinse the bell pepper, cut in half, remove seeds and ribs, and cut into thin strips.
Mix the cucumber, bell pepper and tomato in a bowl. Place one flatbread on worktop and spread the vegetable mixture over it. Top with the other flatbread and cut into quarters. Serve to taste with eggplant or herb dip.
