- 175 grams cornstarch
- 2 tsps Baking powder
- 2 egg whites
- ½ tsp salt
- freshly ground peppers
- vegetable oil (for frying)
- 300 grams shrimp (peeled, deveined, tails left intact)
- 250 grams fish fillets (such as cod or haddock)
- 250 grams Squid ring

Preparation steps

For the batter: Whisk the cornstarch, baking powder and 175 ml (approximately 3/4 cup) cold water together until smooth. Whip the egg whites and salt until stiff and then fold in. Season with pepper.

Heat the oil in a deep saucepan or deep fryer to 180°C (approximately 350°F).

Rinse the shrimp, fish and squid and pat dry. Cut the fish into bite-sized pieces. Working in batches, dip the seafood in the batter and deep-fry until golden brown, around 2-3 minutes. Drain on paper towels.
