175 grams cornstarch
2 tsps Baking powder
2 egg whites
½ tsp salt

vegetable oil (for frying)
300 grams shrimp (peeled, deveined, tails left intact)
250 grams fish fillets (such as cod or haddock)
250 grams Squid ring

Preparation steps

For the batter: Whisk the cornstarch, baking powder and 175 ml (approximately 3/4 cup) cold water together until smooth. Whip the egg whites and salt until stiff and then fold in. Season with pepper.

Heat the oil in a deep saucepan or deep fryer to 180°C (approximately 350°F).

Rinse the shrimp, fish and squid and pat dry. Cut the fish into bite-sized pieces. Working in batches, dip the seafood in the batter and deep-fry until golden brown, around 2-3 minutes. Drain on paper towels.
