600 grams Zucchini
½ bunch cilantro
80 grams Pastry flour (or rice flour)
1 egg white
80 milliliters ice cold water
Frying oil (for frying)

Preparation steps

1.

Rinse zucchini, cut off the ends and cut into about 1-cm (approximately 1/4 inch) thick pins. Rinse cilantro and shake dry.

2.

Stir flour / rice flour with ice cold water and egg white until forms a dough.

3.

Heat the frying oil to 180°C (approximately 350°F) Cover zucchini with dough and fry until crispy. Remove and drain on absorbent paper.

4.

To serve garnish the zucchini with cilantro. Serve with a light tomato sauce from fresh tomatoes.
