Ingredients

For the pancakes
¾ cup
plain flour

For the filling

button Mushrooms (sliced)
4 slices
cooked ham (shredded)
2 cups
canned, cubed Pineapple (drained)
1 ½ cups
Cheese (grated)

Preparation steps

For the pancakes, sift the flour into a bowl and add the salt. Add the eggs and mix into the flour. Mix the milk with the water and gradually beat into the flour mixture to make a smooth batter. Stir in the melted butter.

Melt a little butter in a frying pan over a medium heat, pour in a ladle of batter and swirl the pan so the batter evenly covers the base of the pan. Cook for about 30 seconds or until the bottom of the pancake is lightly browned then flip over with a palette knife and cook for another 30 seconds. Slip the pancake from the pan onto a plate and keep warm. Repeat with the remaining batter.
3.
For the filling, heat the butter in a frying pan and gently cook the mushrooms until tender, stirring from time to time. Fill the pancakes with the fried mushrooms, ham, pineapple chunks and grated cheese and serve immediately.
