- For the sauce
- 1 cup Crème fraiche
- 1 bunch parsley (finely chopped)

- For the waffles
- 1 ½ cups Green beans (halved)
- 2 shallots (finely chopped)
- 2 ½ cups milk
- ½ cup butter
- 2 cups plain flour
- 3 eggs
- 1 sachet Yeast
- 3 pinches salt

Preparation steps
1.
For the sauce: Pour the cream into a large bowl and beat with the chopped parsley and some seasoning. Refrigerate.

Cook the green beans for 6 minutes in boiling salted water. Drain and leave them to cool.

Pour the milk into a pan. Add the chopped butter and the salt and warm over a low heat.
4.
Pour the flour into an electric mixer. Add the yeast and the eggs. Stir in the milk and melted butter mixture and process until you get a smooth, frothy consistency. Pour the contents into a mixing bowl and add the green beans and shallot. Mix.
5.
Heat a waffle maker. Pour a small ladle of batter over all of the surface of the waffle maker and leave it to cook for about 4 minutes. Keep the waffles warm and repeat the process until you have used up all of the batter.
6.
Serve the waffles dressed in the parsley sauce.
