¼ cup Coconut milk
1 cup very finely ground almonds
¼ tsp Sea salt
1 tsp vanilla extract
1 Tbsp Maple syrup (plus extra to serve)
2 Tbsps Coconut oil (melted)
fresh Berry (to serve)

Preparation steps

1.
Heat a waffle iron and grease lightly.
2.
Beat the egg yolks with the coconut milk in a large bowl until the mixture is light and fluffy.
3.
Add the almonds and salt and mix until smooth then stir in the vanilla, maple syrup and melted coconut oil.
4.
Whisk the egg whites until stiff then gradually fold them into the almond batter.
5.
Make the waffles in the waffle iron according to the manufacturer's instructions until cooked through and golden brown. Repeat until all the batter is used.
6.
Serve the waffles in stacks topped with maple syrup and berries.
