- For the biscuits
- ½ cup unsalted butter
- ½ cup caster sugar
- 1 large egg (beaten)
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- ¼ tsp salt
- ½ tsp baking soda
- For the icing
- 1 large egg white
- 1 tsp lemon juice
- 1 ¾ cups powdered sugar
- To decorate

Preparation steps
1.
For the biscuits: beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the egg and vanilla.
2.
Sift in the flour, salt and bicarbonate of soda and mix to a dough. Wrap in cling film and chill for 1 hour.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
4.
Roll out the dough on a lightly floured surface to a thickness of 1cm|1/2".
5.
Using a 7cm|3" heart-shaped cookie cutter, cut biscuits out of the dough and place on the baking trays. Chill for 15 minutes.
6.
Bake for 8-10 minutes, until pale golden. Cool on the baking trays for 5 minutes, then place on a wire rack to cool completely.
7.
For the icing: beat the egg white with the lemon juice. Sift in the icing sugar and whisk until smooth and thick.
8.
Spoon into a piping bag and pipe hearts on the cookies. Sprinkle with the sugar sprinkles and leave to set.
