4 red Apple
2 Tbsps lemon juice

1 shallot
150 grams shrimp
4 shrimp (peeled and deveined)
150 grams Squid ring
2 Tbsps vegetable oil
1 Tbsp lemon juice
salt
freshly ground peppers
sweet ground paprika (to taste)
150 milliliters dry white wine (such as riesling)
150 milliliters Whipped cream (at least 30% fat)
6 Tbsps Cranberry sauce
4 thyme (for garnish)

Preparation steps

Preheat oven to 180°C (approximately 350°F). Peel apples, cut off top and remove cores with an apple corer. Brush apple with lemon juice and place in a greased baking dish. Rinse thyme and shake dry and strip leaves from stems and chop finely. Peel shallot and chop finely.

Rinse shrimp and squid rings and drain well and pat dry. Thread shrimp and squid rings onto 4 wooden skewers. Mix oil, lemon juice, chopped thyme, remaining shrimp and squid rings and season with salt, pepper and paprika. Fill apples with seafood mixture and place skewer over each apple and bake for 10-15 minutes in preheated oven.

Whisk together cornstarch and a little cold water in a small bowl. In a pot, heat wine and cream and bring to a boil and stir in cornstarch and cook until slightly thickened. Remove from heat and let cool until lukewarm. Drizzle warm cream sauce on plates and add cranberry sauce on top of cream sauce. Arrange baked apple on sauce. Season with salt and pepper. To serve, drizzle baked apples with cranberry sauce and garnish each with a sprig of thyme.
