- 8 thick Regensburger sausages
- 2 onions
- 2 Tbsps Vinegar
- 4 Tbsps vegetable oil
- 1 tsp hot Mustard
- salt
- freshly ground peppers
- 2 Tbsps scallions

Preparation steps
1.
Remove skins from sausages and cut into thin slices. Then arrange in a shallow dish.
2.
Peel the onions, cut into thin rings and distribute over the sausage slices.
3.
Mix the vinegar in a small bowl with salt and pepper to taste. Stir in mustard and whisk in the oil. Pour dressing over the slices of sausage and onion rings. Sprinkle salad with freshly ground pepper and chives.
4.
If desired, pack in a sealable container for transport.
