200 grams Bologna sausage
1 onion
1 Pickle
100 grams Emmentaler cheese
4 Tbsps Vinegar
3 Tbsps vegetable oil
1 tsp Dijon Mustard

Preparation steps

1.

Remove the blood sausage and bologna sausage from the casing and cut into thin slivers. Peel the onion and slice thinly. Thinly slice the gherkin. Remove the rind from the cheese and grate finely.

2.

Combine the sausages, onion, gherkin and cheese in a large bowl. Whisk together the vinegar, oil, mustard, salt and pepper. Drizzle over the salad and toss until everything is well coated. Transfer to a serving platter lined with lettuce and garnish with chopped chives.
