- 300 grams Boiled sausage (Lyon, Regensburg or salami)
- 1 onion
- 1 bunch Chives
- 3 Tbsps Wine vinegar
- Cucumber liquid
- Pickled cucumber
- 2 Tbsps vegetable oil
- salt
- peppers (from the mill)
- sugar
- 1 cooked bread dumpling
- 4 hardboiled eggs
- Arugula
- Chives
Preparation steps

Peel sausage and cut into thin slices. Peel onion and cut into rings. Cut pickle (amount to taste) into small cubes. Rinse chives, shake dry and cut into rolls.
Mix together vinegar, pickle and oil with salt, pepper and 1 pinch of sugar for dressing. Mix sausage with onion, cucumber and chives then season with dressing. Salad can sit at room temperature for 30 minutes.

Cut bread dumplings into thin slices. Peel eggs and halve.

To serve mix dumplings with sausage salad, arrange on plates and top with egg halves. Serve garnished with arugula and chives.
