- 250 grams onions
- 2 garlic cloves
- 1 ½ kilograms potatoes
- 100 grams Bacon
- 3 Tbsps clarified butter
- 1 Tbsp Tomato paste
- 500 milliliters Beef broth
- cayenne pepper
- 1 tsp sweet ground paprika
- salt
- 50 grams Sour cream
- 4 Sausage
- 2 Tbsps chopped parsley
- fine Dijon mustard (for serving)

Preparation steps

Peel and finely chop the onions and garlic cloves. Rinse, peel and cut the potatoes into chunks. Finely dice the bacon. Heat the clarified butter in a large saucepan. Saute the onion and garlic until soft. Add the potatoes and the bacon. Add the tomato paste. Deglaze with the broth, cover and cook for 15-25 minutes until the potatoes are soft. Season with cayenne pepper, paprika and salt. Stir in the sour cream.

Heat up the sausages.

Arrange the stew and sausages on plates. Serve sprinkled with mustard and parsley.
