2 Tbsps good-quality olive oil
4 large potatoes (peeled and cubed)
2 onions (peeled and sliced)
2 cloves garlic cloves (peeled and minced)
2 Tbsps Tomato paste
5 cups vegetable stock
½ cup fresh parsley (finely chopped)
12 ozs cured Sausage (cut into bite size pieces)
salt (to taste)
freshly ground peppers (to taste)

Preparation steps

1.
Heat the olive oil in a large saucepan and add the potatoes, onion and garlic. Saute gently for 5 to 7 minutes, stirring frequently.

Add the tomato paste and vegetable stock and bring to a boil. Reduce heat, cover and gently simmer for about 20 minutes, or until the potatoes are just fork tender.
3.
Add the parsley and sausage to the pot and continue cooking for 7 to 8 minutes. Season to taste with salt and pepper. Ladle into bowls and serve hot.
