- 2 slices thin white bread (sliced horizontally)
- 4 Tbsps soft butter
- 4 slices Mortadella
- 1 handful Arugula
- 4 Tbsps Pine nuts
- 4 Tbsps peeled Pistachio
- 120 grams Mascarpone
- salt
- peppers (from the mill)
Preparation steps
1.
Fry pine nuts in a dry frying pan. Chop pistachios finely. Mix pistachios with pine nuts and mascarpone. Season with salt and pepper.
2.
Rinse arugula and pat dry. Remove bread crusts and spread soft butter and mascarpone cream on slices. Cover with arugula and mortadella and roll up each slice from narrow side.
3.
Wrap rolls in foil and chill for 1 hour in refrigerator. Cut rolls diagonally into pieces before serving.
