Mascarpone Cream with Fruit
Soften the gelatin in cold water.
Mix the lime juice, sugar and mascarpone and fold in stiffly whipped cream. Dissolve the soaked gelatin in heated Amaretto fold into the cream.
Pipe mixture into a pastry bag fitted with a large star tip and pipe onto dessert plates;.Garnish with raspberries, kiwi slices, lime zest strips and raspberry puree.
