2 Salmon cutlets (each 200 grams)
2 Tbsps lemon juice
salt
freshly ground peppers
Napa cabbage
250 milliliters fish stock
30 grams cold butter
fresh Dill

Preparation steps

1.

Season salmon with salt, pepper and lemon juice.

Rinse cabbage leaves, trim and place in a steamer basket. Place salmon on the leaves.

Bring the fish stock to a boil in a pot, place the steamer basket over the pot, cover and steam salmon about 3 minutes. Turn off heat and let stand another 3 minutes, then take out the steamer basket and set aside, covered.

4.

Bring the fish stock to a boil over high heat and cook until reduced to half the volume. Then remove from heat and whisk in the butter in small pieces. Stir in some dill, season with salt and pepper and serve with the salmon. If desired, serve with boiled potatoes and salad.
