1 Romaine lettuce
4 slices Toast
1 Tbsp Mayonnaise
2 tsps coarse-ground Mustard
3 Tbsps White vinegar
6 Tbsps vegetable oil
2 Anchovy fillet
3 garlic cloves
salt

3 Tbsps vegetable oil (for frying)

Preparation steps

1.

Remove leaves from head of lettuce. Rinse, spin dry and tear into bite size pieces. Remove crusts from bread and cut into cubes. In a bowl, whisk together mayonnaise, mustard and vinegar in a bowl and gradually whisk in oil.

Drain anchovies and mix into mayonnaise mixture. Peel and mince 1 clove of garlic and stir into dressing. Season with salt and pepper. Cut remaining garlic into thin slices and sweat in a hot pan with oil until translucent. Remove garlic from pan and set aside for garnish.

3.

Brown bread cubes in the hot garlic oil until golden brown and rest on paper towel. Season with salt to taste. In a bowl, mix lettuce with croutons and dressing and serve immediately.
