4 slices Black bread (200 grams)
1 garlic clove
1 onion
Raclette Cheese (200 grams)
Gruyere (200 grams)
125 milliliters dry white wine
4 Tbsps butter
500 milliliters milk
200 grams Whipped cream
salt
peppers (freshly ground)

Preparation steps

1.

Cut bread into small cubes. Peel garlic and cut into slices. Peel and finely chop onion. Remove rind from both types of cheese and cut into cubes.

Heat half the butter in a pan. Add bread cubes and garlic and cook until crispy. Set aside.

3.

Heat remaining butter in a saucepan. Add onions and cook until softened. Add wine, bring to a boil and cook until evaporated. Stir in milk, cream and cheese. Cook, stirring, until cheese melts.

4.

Puree soup with an immersion blender until frothy and season to taste.

5.

Serve soup topped with garlic-croutons.
