- 2 handfuls Scented Rose petal (unsprayed)
- 35 ozs Strawberries
- 2 ¾ cups jam sugar
- 1 juiced lemon
- 2 Tbsps Rose water

Preparation steps
1.
Wash and dry your jars and place them on a roasting tin in a low oven to sterilise while you make the jam. Gently wash the rose petals and cut off and discard the white part at the base of each one.

Hull the strawberries, cut them in half and place them in a large preserving pan. Sprinkle over the sugar and gently mix in to the strawberries. Set the pan over a low heat and let the sugar completely dissolve, stirring very gently from time to time to prevent the sugar burning.

When the sugar has completely dissolved turn up the heat and bring the mixture to a fast boil. Boil hard for 10-15 minutes, stirring frequently and skimming off any scum that rises to the surface. Drop a teaspoon of the mixture onto a cold plate to test the set - the surface of the jam should wrinkle when you push it with your finger.

Add the lemon juice, rose petals and rosewater, boil for 3 minutes more then remove the pan from the heat. Let the jam settle for 10 minutes then pour into the sterilized jars and cover with lids.
