Roasted Potatoes with Garlic
Preheat a convection oven to 180°C (approximately 350°F).
Peel the potatoes, and halve or quarter depending on the size. Transfer to a roasting pan, and add the broth. Season with salt and pepper and simmer in the oven for 20 minutes. Stir occasionally. The potatoes should be soft, and the liquid nearly absorbed. Sprinkle with the rosemary, olive oil, and pressed garlic cloves. Increase the temperature of the oven to 220°C (approximately 430°F). Cook until golden brown 15-20 minutes, turning occasionally.
