- 8 medium, waxy potatoes

- 8 Cuttlefish ((baby squid, ready to cook)

- 3 garlic cloves
- 2 egg yolks
- 1 tsp medium hot Mustard
- lemon juice
- 150 milliliters olive oil
- freshly ground peppers
- 20 grams butter

Preparation steps

Rinse the potatoes and cook in boiling salt water for 20-25 minutes. Rinse the calamari and cut into small cubes.
For the mayonnaise, peel the garlic and squeeze through a press. Using a food processor, puree the garlic, egg yolks, mustard and a dash of lemon. Add the oil gradually, stirring constantly, until the mixture gets a creamy consistency. Season with salt and pepper.

In a hot pan, melt the butter. Fry the calamari with the tentacles until golden brown. Season with salt and pepper. Peel the potatoes, arrange on plates and serve garnished with the mayonnaise and calamari.
