Roasted Tomatoes with Garlic
Tomatoes are on the menu in summer, they not only taste great but also contain a lot of valuable ingredients: lycopene, a carotenoid, catches free radicals and has an antioxidant effect. It is also believed to reduce the risk of cardiovascular disease and prostate cancer.
The tomatoes with garlic are an ideal accompaniment to the barbecue season. Try the tomatoes with a grilled focaccia and a mixed salad.
Rinse, halve and remove the seeds from the tomatoes. Rinse the thyme, shake dry and chop coarsely. Peel the garlic, cut into thin slices and fry with 1 tablespoon olive oil in a hot pan until golden.
Coat a roasting pan with the remaining oil and add the tomatoes, skin-side down. Sprinkle with toasted garlic and thyme and season with salt and pepper. Roast for 15-20 minutes in a preheated oven at 200°C (approximately 400°F).
