Preparation steps

1.

Rinse the fennel and cut into quarters.

Season the goat with salt and pepper. And sear in hot oil on all sides. Add the tomatoes, herbs, garlic, peppercorns, and fennel. Add the broth and white wine and bring to a simmer. Simmer for 2 hours in the oven at 160°C (approximately 325°F). Turn the meat several times and baste with the sauce. Add water if needed.
