1 small chicken (1 kg) (approximately 2 pounds)
3 Tbsps butter

4 Mandarin orange

Preparation steps

1.

Rinse the chicken, pat dry and season with salt and pepper. Brush with melted butter, place breast-side down in a roasting pan and roast in a preheated oven (220°C) (approximately 425°F) for 20 minutes.

Meanwhile, peel the mandarin oranges and separate the segments. Flip the chicken over, pour 1 cup salted water over the breast and roast for another 20 minutes, basting occasionally. Add the mandarin orange segments and roast for another 5 minutes.
