- For the dressing
- 1 sm jar Mandarin orange (about 312 grams drained)
- 2 Tbsps Lime juice (freshly squeezed)
- 2 Tbsps ginger (freshly grated)
- 1 garlic clove (crushed)
- 4 Tbsps liquid honey
- For the salad
- 800 grams Chicken breasts (with skin)
- 60 milliliters olive oil
- salt
- peppers (freshly ground)
- 200 grams Romaine lettuce
- 100 grams fresh cilantro
- 50 grams Cashews (roasted)
- 4 small Beets (cooked and quartered)

Preparation steps

Combine all the other ingredients for the dressing in a bowl, then toss with the Mandarin oranges and their juice. Set aside.
2.
Rub the chicken breasts with olive oil and season with salt and pepper. Cook the chicken breasts in a pan over medium heat on both sides until they are cooked through and crispy on the skin side, about 10 minutes.
3.
Cut the chicken breasts into slices. Rinse lettuce leaves and spin dry. Place on plates with cilantro, cashews and beets. Drizzle with the dressing and serve immediately.
