For the chicken and mandarin orange salad
8 large leaves Lettuce (as desired)
2 Chicken breasts (cooked)
1 can Mandarin orange
2 sticks Celery
50 milliliters Vegetable broth
1 Tbsp butter
For the dressing
3 Tbsps balsamic vinegar (White)
4 Tbsps sunflower oil
salt
Chili powder
1 pinch sugar

Preparation steps

For the salad, rinse the lettuce, spin dry and arrange decoratively on plates. Cut chicken into bite-sized cubes. Drain mandarins. Rinse celery, cut into slices and sauté in butter. Add broth and simmer until tender. Set aside and let cool.

For the dressing, whisk together all ingredients. Toss chicken and mandarin oranges with dressing and arrange on lettuce leaves with celery. Serve immediately.
