- Iceberg lettuce
- 1 Red Bell pepper
- 1 bunch scallions
- 1 can Mandarin orange
- 40 grams unsalted Peanuts
- 200 grams Greek yogurt
- 1 Tbsp milk
- 3 tsps Curry
- lemon juice
- salt
- peppers
- 1 pinch sugar

Preparation steps
1.
Trim the skin from the chicken and remove the bones. Cut the meat into bite-size pieces.

Rinse the iceberg lettuce, chop it and allow it to drain thoroughly. Cut the pepper into quarters, rinse and cut into small pieces. Rinse the scallions and cut diagonally into thin rings. Drain the mandarin oranges and collect the juice. Toast the peanuts in a dry pan.

Stir the Greek yogurt with the milk, some mandarin orange juice and the curry. Season with lemon juice, salt, pepper and a pinch of sugar.
4.
Add the lettuce into a bowl. Mix the other ingredients into the lettuce. Drizzle the dressing on top to serve.
