- For the mango salsa
- 2 Mangoes (diced)
- 3 Tbsps cilantro (finely chopped)
- 1 small Red onion (finely chopped)
- 1 tsp dried, fire-roasted Tomatoes
- 2 tsps fresh Lime juice
- Sea salt
- For the chicken
- 2 Tbsps Nam pla (asian fish sauce)
- 2 Tbsps Peanut oil
- 2 Tbsps soy sauce
- ¼ cup chopped cilantro
- 1 garlic clove (minced)
- 1 tsp fresh ginger (minced)
- 1 tsp honey
- 1 Tbsp Sesame seeds
- 6 whole Chicken legs (skinless)

For Salsa:

Combine all ingredients together and gently mix. Cover and refrigerate until ready to use.

For Chicken:

Preheat oven to 400º F/ 200º C.

In a small bowl combine fish sauce, peanut oil, soy sauce, cilantro, garlic, ginger, honey and sesame seeds. Coat the chicken with the marinade. Marinate for at least 20 minutes.

Transfer the chicken to a baking sheet and roast for 45-50 minutes, until cooked through. Serve with mango salsa and garnish with fresh cilantro.
