2 centimeters ginger
2 green chili peppers
1 tsp dried thyme
1 generous pinch Nutmeg
1 pinch Ground cinnamon
1 generous pinch ground allspice
1 generous pinch Ground clove
2 Tbsps sunflower oil
1 Lime (juice)
4 Chicken breasts with skin (about 140 grams or 5oz each)
250 grams Long grain rice
500 milliliters Chicken broth
1 Mango
250 grams canned black Beans

Preparation steps

1.

Peel the onion and chop. Peel the ginger and coarsely chop. Cut the chile peppers in half, remove seeds and ribs. Combine with thyme, nutmeg, cinnamon, allspice, clove, oil and a little lime juice in a blender and puree. Rinse the chicken breasts, pat dry and rub with the marinade. Marinate at least 3 hours in the refrigerator.

Preheat oven broiler.

In a pot, bring broth to a boil, add rice and cook, covered, for about 20 minutes at low heat.

Remove chicken from the marinade , place on a baking sheet and broil about 15 minutes. Turn halfway through cooking and baste with marinade.

Peel mango and cut into pieces. Rinse beans and drain. Add both to the rice during the last 5 minutes of cooking. Season with lime juice and salt.

6.

Season the chicken with salt and peper and serve in bowls with rice.
