4 cups minced mixed Meat
2 Tbsps vegetable oil
1 onion (finely diced)
1 clove garlic cloves (finely diced)
1 red chili pepper (chopped)
2 red peppers (cut into small strips)
1 Tbsp tomato puree
2 ½ cups Meat stock
1 ¼ cups Sieved Tomatoes
1 tsp sweet paprika
1 cup Kidney beans (tin, drained)
1 ¼ cups sweet Corn (tin, drained)

Preparation steps

Fry the meat in hot oil in a pan until it breaks apart. Add the onion, garlic and chilli and fry together for 1-2 minutes. Add the peppers and tomato purée, fry briefly and deglaze with the stock. Add the sieved tomatoes and the paprika and simmer, stirring occasionally, for around 1 hour, adding more stock if necessary.

10 minutes before the end, stir in the beans and sweetcorn. Finally, season to taste with salt, a pinch of sugar, and ground black pepper. Serve on a bed of rice if desired.
