Preparation steps

1.

Bring rice and water to a boil in a saucepan, then cover and cook over very low heat for about 20 minutes. Peel onion, chop finely and saute in 1 tablespoon oil. Season with salt and stir into cooked rice. Peel plantain and cut into slices.

2.

Heat the remaining oil in a pan and cook the plantain slices until crispy, turning several times. Top rice with plantain before serving.
