600 grams starchy potatoes
150 grams red Lentils
1 red chili pepper
2 scallions
1 tsp freshly grated ginger
2 Tbsps freshly chopped cilantro
salt

Nutmeg (freshly grated)
50 grams Pastry flour
vegetable oil (for frying)
cilantro (for garnish)

Preparation steps

1.

Rinse potatoes and steam about 30 minutes.

2.

Rinse lentils and transfer to a small saucepan. Cover with water and simmer over medium-low heat, about 10 minutes.

3.

Rinse and halve chile pepper, remove seeds and ribs and finely chop. Rinse, trim and chop scallions.

4.

Drain and peel potatoes. Press potatoes through a potato ricer into a large bowl. Drain lentils well and add to the bowl, along with chile pepper, scallions, ginger and cilantro. Stir in egg and season with salt, pepper and nutmeg. Mix well. If necessary, add a little flour to help bind ingredients together.

5.

Form mixture into small patties and coat with flour.

6.

Heat oil in a large skillet. Add lentil patties and fry until golden brown, 3-4 minutes per side.

7.

Drain lentil patties on paper towels and serve garnished with cilantro leaves.
