- For the curry
- 2 onions
- 2 cups Red lentils
- 3 Tbsps vegetable oil
- 5 cups vegetable stock
- 2 tsps Turmeric
- ½ tsp ground cilantro
- ½ tsp Mustard seed
- ½ tsp Chili powder
- ½ tsp Cumin
- ¼ tsp ground allspice
- salt

- 2 tsps Sambal oelek
- 2 Tbsps Lime juice
- 2 Tbsps finely chopped parsley
- For the rice
- 1 cup Basmati rice
- 2 tsps Nigella seeds
- salt
- 1 Red onion (sliced)
- To garnish
- halved Limes
Preparation steps
1.
For the curry: finely chop 1 onion and cut the other into fine rings.
2.
Heat 2 tablespoons of oil in a large pan and add the chopped onion. Cook gently until translucent. Add 1/4 of the lentils and cook for 2 minutes, stirring.

Add 350ml|12 fl oz of vegetable stock, cover and cook over a medium heat for about 15 minutes, until the lentils are soft. Mash the lentils, then stir in the remaining stock.

Add the remaining lentils and the onion rings, cover and simmer for 10-12 minutes, stirring occasionally.

Heat the remaining oil in a frying pan and add the turmeric, coriander, mustard seeds, chilli powder, cumin and allspice and cook, , stirring over a low heat for 30 seconds.
6.
Stir into the lentil mixture and season with sambal oelek, lime juice, salt and pepper. Stir in the parsley.
7.
Cook the rice according to the directions on the pack, adding the nigella seeds to the pan.
8.
Place the lentil curry and rice on serving plates. Garnish the rice with sliced red onion and place a lime half on each plate.
