- 800 grams waxy potatoes
- salt
- 2 Tbsps olive oil
- 100 grams Prosciutto
- 50 grams sun-dried Tomatoes (in oil)
- 50 grams black Olives (pitted)
- 150 grams Mozzarella
- freshly ground peppers
- 4 thyme
Preparation steps
1.
Scrub potatoes and cook in salted water for about 30 minutes or until tender. Rinse in cold water and peel, slice.
2.
Arrange potato slices with ham, coarsely chopped tomatoes and olives in four ramekins and sprinkle with oil. Season with salt and pepper.
3.
Cut mozzarella into cubes and sprinkle over potatoes. Cook under a hot broiler for about 6-8 minutes, watching carefully. Remove from the oven and garnish with thyme. Serve.
