½ cup chopped, green Bell pepper
12 fresh eggs
¼ cup milk
1 Tbsp butter
12 Corn tortilla
1 Avocado (peeled; stone removed and thinly slices)
1 cup shredded Cheddar cheese
1 cup Tomato salsa

Preparation steps

1.
In a large nonstick skillet, cook sausage and bell peppers over medium heat for 5 to 6 minutes, stirring frequently, until sausage in heated through and peppers are tender. Remove sausage and pepper mixture from skillet and keep warm.

Beat eggs and milk with a wire wish until well blended. Melt butter in same skillet over medium-low heat. Add egg mixture and cook for 6 to 8 minutes, stirring frequently, until eggs have set. Stir in sausage mixture and cook for an additional 2 minutes. Remove from heat.

Meanwhile, warm tortillas according to package instructions.

Divide sausage and egg mixture among tortillas, top with avocado slices and sprinkle with cheese. Transfer to serving plates and top with salsa. Serve.
