1 kilogram white Asparagus

1 tsp sugar
3 Limes
½ handful Lemon thyme
60 grams butter

Preparation steps

Rinse, peel and remove woody ends from asparagus. Bring a large pot of salted water to a boil. Add sugar and asparagus and cook about 20 minutes.

Meanwhile, rinse limes. With a citrus zester, remove zest from two of the limes. Squeeze juice from limes. Cut the third lime in slices. Rinse thyme and shake dry. In a pan, melt butter. Stir in lime zest, lime juice and thyme. Cook over low heat, about 5 minutes. Season with salt.

Drain asparagus. For each serving, wrap 5-6 stalks of asparagus with a slice of prosciutto. Drizzle with lime-butter and serve immediately with lime wedges.
