250 grams softened butter

Preparation steps

1.

Rinse the lemon balm, pat dry, and finely chop. 

2.

Rinse the lime under hot water. Finely grate the zest from the lime. Squeeze 1 tablespoon of juice from the lime. Mix the lime juice, lemon balm, and lime zest with the butter. 

3.

Season the butter with salt and pepper. Form into a roll using plastic wrap. Wrap in aluminum foil, and place in the refrigerator until ready to use.
