- 4 trout (scaled and gutter)
- 2 Tbsps olive oil
- 2 lemons (sliced)
- 2 cloves garlic cloves (finely chopped)
- 8 oil-packed sun-dried tomatoes (roughly chopped)
- 8 slices Parma ham
- Basil (to garnish)

Preparation steps
1.
Wash the trout and pat dry with kitchen paper. Season inside with salt and pepper and rub inside and out with the olive oil.
2.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6. Stuff the cavities of the trout with lemon slices, garlic and dried tomatoes.
3.
Wrap each fish in 2 slices of Parma ham and place in an ovenproof dish. Bake in the oven for 20-25 minutes, basting from time to time, or until the fish is cooked through.
4.
Serve garnished with basil leaves.
