Preparation steps

1.

Cut the meat along the bone. Season generously with salt and pepper and tie up with kitchen twine to form a uniform roast. Place sprigs of rosemary and bay leaf under the twine.

2.

Put the prime rib in a roasting pan and place in the lower third of a preheated oven, at 200°C (approximately 400°F) and cook for 1½ hours. After 45 minutes, cover the prime rib with aluminum foil. Turn off the heat and let stand in the oven.

3.

Rinse the beans and cook in boiling salted water for 4-5 minutes. Drain well. Wrap the beans with slices of bacon into small bundles. Heat the oil in a frying pan and cook the bean bundles over medium heat for about 2-3 minutes. Add the butter at the end of cooking time and season with salt and pepper.

4.

Remove the kitchen twine from the prime rib. Slice the meat and serve with the bacon and green bean bundles.
