- 500 grams small waxy potatoes
- 300 grams Quark
- 80 grams acid Whipped cream
- salt
- peppers
- 2 Tbsps scallions
- 2 Tbsps chopped parsley
- To garnish
- Edible flowers
Preparation steps
1.
Scrub the potatoes and cook in boiling salted water until knife-tender, about 25 minutes. Mix together the quark and sour cream and season with salt, pepper and herbs.

Drain potatoes, peel and serve with the sour cream mixture and garnished with edible flowers.
