750 grams starchy potatoes
50 grams butter
2 egg yolks
salt (and)
freshly ground peppers
freshly grated Nutmeg
2 Tbsps melted butter
vegetable oil (for the baking tray)

Preparation steps

1.

Peel the potatoes and cook in boiling salted water for about 25 minutes. 

2.

Drain, then press through a potato ricer while still hot and mix with butter and egg yolks. Season with salt, pepper and nutmeg.

3.

Spoon the puree into a pastry bag with a large star tip and pipe rosettes onto a greased baking sheet. Brush with melted butter and bake in the convection oven at 220°C (approximately 425°F) for about 8-10 minutes until golden brown.
