Ingredients

For the rosti
1 ½ kilograms potatoes
1 onion
2 eggs
2 Tbsps Pastry flour
salt
freshly ground peppers
vegetable oil (for frying)
For the applesauce
1 kilogram Apple
3 Tbsps sugar
1 generous pinch Ground cinnamon
1 generous pinch Ground clove
1 tsp Lemon peel

Preparation steps

For the applesauce, rinse the apples, cut into quarters, remove the cores and cut into pieces. Place the apple pieces in a pot with 3 tablespoons of water, sugar, lemon zest and spices and simmer for a few minutes, until the apples are soft. Remove from the heat and set aside.

For the rosti, peel the potatoes, rinse and finely grate. Peel the onion and grate. Stir the potatoes and onion with the eggs and flour and season with 1 teaspoon salt and some pepper.

In a large pan, heat 3 tablespoons of oil. Pour in about 2 tablespoons of the potato mixture at a time and flatten slightly to form the pancakes. When the edges become brown, turn and cook on the other side. Keep the pancakes warm in the oven at 70°C (approximately 150​°F). Serve with applesauce.
