Preparation steps

For the potato pancakes, peel, rinse and grate coarsely potatoes. Beat the eggs and mix with the flour, salt and pizza seasoning. Heat the oil in portions in a small nonstick 12-14 cm (approximately 5-inch) diameter pan. Add about 3 to 4 tablespoons potatoes into the pan and cook until golden brown on both sides.

Place the potato pancakes on a lined baking pan. Rinse tomatoes and cut into slices. Cut ham and mozzarella into slices. Top each potato pancake with tomatoes, ham and mozzarella. Bake in preheated 220°C (approximately 425°F) oven for 10 minutes until the mozzarella is melted. Sprinkle the potato pancakes pizzas with some pizza seasoning and serve garnished with basil.
