For the noodles
1 kilogram potatoes
300 grams Pastry flour
60 grams Potato flour
2 Tbsps Semolina flour
4 egg yolks
For the sauce
500 milliliters Whipped cream
3 eggs
clarified butter
150 grams Bacon (cut into thin strips)
1 large onion (finely chopped)
salt
freshly ground peppers
freshly grated Nutmeg
4 Tbsps scallions

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Boil the potatoes in salted water for about 25 minutes, then drain, peel and press through a ricer. Mix the potatoes, flour, potato flour, semolina, and egg yolks. Season with salt, pepper, and nutmeg and knead well.

Form the potato mixture into finger-thick noodles. Distribute butter in small pieces in a baking dish. Pour the noodles into the baking dish and bake until golden brown for about 30 minutes.

Whisk the cream with the eggs and season with salt, pepper, and nutmeg, then pour over the potato noodles and cook for an additional 10-15 minutes.

Sauté the bacon and chopped onion in a little butter. To serve, arrange the potato noodles on plates, top with the bacon-onion mixture and garnish with chives.
