250 grams potatoes (cooked, still hot)
1 kilogram potatoes (raw)
150 grams Potato starch
Vinegar
250 grams Feta (Bryndza)
1 onion (diced)
200 grams Bacon (diced)
2 Tbsps vegetable oil
salt
Nutmeg (ground)
2 Tbsps scallions (for garnish)

Preparation steps

Grate the raw potatoes in a cloth (soaked in vinegar water) finely and press out well. Press the still hot boiled potatoes through a ricer and mix well with the raw potatoes. Add starch and knead into a smooth dough. Season with salt and nutmeg. Scoop dumplings with a teaspoon and cook in boiling water for 2-3 minutes until they float to the surface. Strain and toss in a pan with crumbled feta cheese until the cheese melts. Serve on warmed plates.

Cook the onion in hot oil until golden brown with the bacon. Place on the dumplings and serve garnished with chives.
