- 600 grams Sweet potato
- 1 bunch Radish
- 1 red onion
- 150 milliliters Beef broth
- 5 Tbsps Wine vinegar
- 1 tsp spicy Mustard
- 4 Tbsps vegetable oil
- salt
- freshly ground peppers
- 3 Tbsps scallions

Preparation steps
1.
Rinse potatoes and cook until tender about 30 minutes in salted water. Peel and cut into thin slices. Rinse radishes and into thin slices or grate. Peel onion and chop finely.
2.
Bring broth to a boil and add vinegar and onion. Season dressing with salt, pepper and mustard. Pour dressing over potato slices, let stand for about 15 minutes, Add oil and radishes. Season with salt and pepper. Sprinkle with chives, mix well and serve.
