16 ozs new potatoes (halved if large)
1 bunch Radish (thinly sliced)
2 Tbsps snipped Chives
For the dressing
4 Tbsps extra virgin olive oil
2 Tbsps mixed salad
2 tsps coarse-grain Mustard
1 tsp clear honey
½ tsp salt
freshly ground Black pepper (to taste)
To garnish
whole Radish (with leaves)
1 Tbsp torn mint

Preparation steps

1.
Cook the potatoes in a pan of boiling salted water until just tender. Drain well and return to the hot pan.
2.
For the dressing: whisk together all the ingredients and mix thoroughly with the potatoes. Leave to stand at room temperature for at least 1 hour, tossing occasionally to distribute the dressing while the potatoes are cooling.
3.
Mix in the radishes and chives.
4.
Put into serving dishes and garnish with whole radishes. Sprinkle with mint and serve warm or cold.
