2 tsps grated Lemon peel
cup Rice pudding (short-grain)
0.333 cup sugar
5 eggs
cinnamon (for decoration)

Preparation steps

1.
Take 4 tablespoons of the milk and set aside. Put the rest of the milk into a pan with the lemon peel and bring to a boil. Add the rice and sugar, cover and cook very gently over a low heat for about 40 minutes until the rice is swollen and soft.

Separate the eggs. Beat the egg whites until stiff. Whisk the egg yolks with the reserved milk and add to the rice. Reheat, but do not let it boil again.
3.
Remove from the heat and fold in the beaten egg whites. Spoon into bowls, decorate with cinnamon and chill well before serving.
