Various studies suggest that pomegranates can have a positive effect on cardiovascular diseases or even arthritis and some types of cancer - however, the final proof is still pending.

The harvest period for the fruit cultivated in the Mediterranean and the Middle East is from September to December. Buy only ripe fruit, because pomegranates do not ripen!

1 canning jar (400 ml or 2 jars of 250 ml capacity), 2 Kitchen towels, 1 Large knife, 1 Citrus juicer, 1 Measuring cups, 1 Teaspoon, 1 Pot with lid, 1 Silicone spoon, 1 small Plate, 1 Fine-mesh sieve, 1 small Ladle

Preparation steps

Pomegranate Jelly preparation step 1

Rinse screw-top jar(s) (a total capacity of 400 ml) (approximately 1 3/4 cups total capacity) and lid(s) in a pot of  boiling water and let dry upside down on a kitchen towel.

Halve the pomegranates crosswise with a large knife and squeeze halves firmly on a juicer.

Measure out 300 ml (approximately 1 1/4 cup) of pomegranate juice and combine with the jam sugar and lavender flowers in a pot. Stir once, cover and let stand about 10 minutes.

Bring mixture to a boil and cook over high heat, stirring constantly, 5-7 minutes (skim foam from surface as needed).

Test setting point by placing a few drops of the hot liquid on a small plate. If it begins to set after a few seconds it is ready to be placed in jars. Otherwise, continue to cook for another 1-2 minutes and repeat the test.

Pour the hot mixture through a funnel into the prepared jar(s) and seal immediately. Turn upside down and rest on a damp kitchen towel for 5 minutes before turning right side up to cool completely. Tip: To preserve the jelly for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
