800 grams Elderberry
300 milliliters Apple juice
350 grams jam sugar (2:1 ratio)
½ organic lemon (juiced)

Preparation steps

1.

Rinse the elderberries and remove from the vine. Bring to a boil with the apple juice. Cover and cook for 10 minutes, then cool slightly. Line a strainer with cheesecloth, pour in the berry mixture, and let drain overnight.

The next day, queeze the cloth well. Fill the elderberry juice with enough water to equal 600 ml (approximately 20 ounces). Place in a pot and add the jam sugar and lemon juice. Bring to to a boil, then cook for 4 minutes.

3.

Pour the jelly into hot prepared jars. Seal tightly, then place upside down for 10 minutes. Turn right side up and cool completely.
